Method
Sponge
Beat the butter, sugar, salt & vanilla sugar vigorously for about 10 minutes. Meanwhile, preheat the oven to 350°F (170°C) convection (fan) and line a 10-inch (26 cm) springform pan with parchment paper.
As soon as the mixture is light and fluffy, beat in the eggs one at a time, mixing well after each, and scrape down the sides of the bowl regularly if needed.
Roughly combine the flour, baking powder & hazelnuts and stir them into the batter.
Pour the batter into the springform pan and bake in the preheated oven until golden, then let it cool in the pan.
Release the sponge from the pan, cut it in half horizontally and set the pan ring around the bottom layer.
Filling
Whip the cream until stiff, sprinkling in the whipped cream stabilizer as you go.
Lovingly stir the ganache or Nutella into the cream, then spread half of it over the bottom layer in the pan, cover it completely with wafers and spread the rest of the cream on top. Place the second layer on top and let the cake set in the fridge for at least 3 hours.
Decoration
Whip the cream until stiff, fill it into a piping bag and pipe it on top to decorate. Finish with hazelnuts, cocoa powder & wafers.
