This recipe is made for an 11 × 10 ½-inch (28 × 27 cm) adjustable baking frame. I cut it into 24 bars, each 2 ¾ × 1 ¾ inches (7 × 4.5 cm). It is a real treat for anyone who loves salted caramel and rich chocolate.

Ingredients

Makes 24 servings

Salted caramel:

  • ½ cup plus 2 tbsp125 ggranulated sugar
  • 3 ½ tbsp50 gunsalted butterGerman butter is unsalted and has about 82 percent fat. In the US use unsalted butter (European-style unsalted butter is closest); in the UK, unsalted butter.
  • 7 tbsp100 mlheavy creamGerman cream for whipping has about 30 to 32 percent fat. In the US use heavy cream or heavy whipping cream; in the UK, whipping cream (double cream also works but whips faster, so watch it).
  • ¼ to ½ tspsaltdepending on how salty you like it

You will also need:

  • 3 ½ oz100 gwhole hazelnuts
  • granulated sugar (optional)

1-2-3 shortcrust pastry:

  • 6 tbsp75 ggranulated sugar
  • 1 stick plus 3 tbsp150 gunsalted butter
  • 1 ¾ cups225 gall-purpose flourIn German recipes plain flour means soft wheat flour Type 405 unless stated otherwise. In the US use all-purpose flour; in the UK, plain flour.
  • 1 pinchsalt

Chocolate sponge:

  • 6large eggs
  • ¾ cup plus 2 tbsp175 ggranulated sugar
  • 1 pinchsalt
  • 1 cup120 gall-purpose flour
  • ½ cup plus 2 tbsp80 gcornstarchA fine starch, usually made from corn, used to thicken creams and lighten cakes. In the US use cornstarch; in the UK, cornflour.
  • ½ cup plus 1 tbsp50 gunsweetened cocoa powderPure unsweetened cocoa powder for baking. In the US use unsweetened cocoa powder (not hot cocoa mix); in the UK, cocoa powder (not drinking chocolate).
  • 5 tbsp75 gmelted unsalted buttercooled
  • 1 ¾ oz50 ggrated chocolate

Vanilla buttercream (Italian meringue):

  • 5egg whites
  • 1 pinchsalt
  • 1 cup plus 2 tbsp225 ggranulated sugar
  • 4 tbsp65 mlwater
  • 1vanilla beanA whole vanilla pod; the seeds are scraped out and used. In the US use a vanilla bean, or 1 tsp vanilla bean paste per bean; in the UK, a vanilla pod, or 1 tsp vanilla bean paste per pod.
  • 2 sticks plus 2 tbsp250 gunsalted buttersoftened

Glaze:

  • ¼ cup plus 1 tbsp70 gheavy cream
  • 2 oz60 gdark chocolateDark chocolate with roughly 50 to 70 percent cocoa. In the US use bittersweet or semisweet chocolate; in the UK, dark chocolate (50 to 70 percent).
  • 3 ½ oz100 ghazelnut nougat (gianduja)German nougat is a soft hazelnut chocolate, not the white chewy nougat known in the US and UK. In the US and the UK use gianduja; for fillings, chocolate hazelnut spread works but is softer.
  • solid coconut fatjust a tiny bit. A block of pure, hardened coconut fat with a neutral taste. In the US use refined (neutral) coconut oil; in the UK, refined (odourless) coconut oil.

Method

Making the salted caramel

  1. Melt the sugar over medium heat in a tall saucepan and let it caramelize until golden brown.
  2. Then carefully add the butter, cream and salt. The caramel will seize up at first, so keep stirring until it turns creamy again.
  3. Set the finished caramel aside and let it cool.
  4. For the crunch and the decoration, toast 3 ½ oz (100 g) whole hazelnuts in a dry skillet or in the oven at 200°F (100°C) convection (fan), then chop them coarsely.
  5. If you love things extra caramelly, you can caramelize the hazelnuts in a little sugar before chopping them.

1-2-3 shortcrust pastry

  1. Mix all the ingredients into a smooth dough, cover it and chill it in the fridge for at least half an hour.

Chocolate sponge

  1. In the meantime, make the chocolate sponge: first weigh out all the dry ingredients and mix them together.
  2. Separate the eggs. Beat the egg whites with the salt and half of the sugar, and beat the egg yolks with the other half of the sugar until light and fluffy.
  3. Gently combine the two mixtures, then fold in the grated chocolate and all the sifted dry ingredients.
  4. Finally, add the melted butter and spread the chocolate batter evenly on a baking sheet, ideally inside the 11 × 10 ½-inch (28 × 27 cm) baking frame. Bake in the preheated oven at 350°F (170°C) conventional (top and bottom heat) for about 15 minutes (until a toothpick comes out clean).
  5. While it bakes, take the shortcrust pastry out of the fridge and roll it out thinly to the size of your baking frame.
  6. Prick the pastry all over with a fork and set it aside until the chocolate sponge is done.
  7. Now raise the oven temperature to 400°F (200°C) and bake the shortcrust for about 10 minutes, until golden brown.
  8. Spread the salted caramel over the shortcrust right away while it is still warm, because that makes it very easy to spread.

Vanilla buttercream

  1. While the layers cool, you can already make the buttercream.
  2. Combine the sugar and water in a saucepan and boil the syrup to 244°F (118°C). A candy thermometer is a big help here.
  3. Shortly before the syrup reaches that temperature, start beating the egg whites with the salt until stiff.
  4. Now pour the very hot sugar syrup carefully and slowly into the beaten egg whites while mixing, and add the seeds scraped from the vanilla bean.
  5. The meringue will get very warm and needs to be beaten until it is back at room temperature (this can take up to 20 minutes).
  6. Meanwhile, beat the butter until it is as light and fluffy as possible (at least 5 minutes).
  7. Now combine the two mixtures, both at the same temperature, into the finished buttercream.

Assembling

  1. Now it is time to put everything together.
  2. First cut the completely cooled chocolate sponge in half.
  3. Place the shortcrust with the caramel on a surface you can cut on, set the baking frame around it and lay the first chocolate sponge layer on top.
  4. Soak the sponge with a liquid of your choice (for example simple syrup, made by bringing equal parts water and sugar to a boil, or chocolate syrup thinned with milk).
  5. Then spread most of the buttercream over the sponge; keep back only as much as you want for decorating at the end.
  6. Scatter the chopped hazelnuts over the cream and place the second sponge layer on top, then soak it as well.
  7. Chill the cake briefly while you prepare the last step.

Glaze

  1. Bring the cream to a boil and pour it over the chopped chocolate.
  2. Once everything has melted, stir in the hazelnut nougat and, for shine, a little solid coconut fat.
  3. If you are not a nougat fan, simply replace it with a smaller amount of chocolate to make a regular ganache.
  4. Spread the glaze evenly over the chilled cake, then refrigerate it for a few hours or, best of all, overnight.

Decorating

  1. Cut the well chilled cake into small bars and decorate them however you like with the remaining buttercream and a few chopped hazelnuts.
  2. Happy baking, and above all, happy eating!
