Method
Cake
Grease a loaf pan and dust it with flour, or line it with parchment paper. Preheat the oven to 350°F (170°C) convection (fan).
Beat the butter, sugar, salt & orange zest vigorously until light, then beat in the eggs one at a time.
Combine the flour and baking powder. Add the dry ingredients to the butter mixture and pour in the orange juice and milk.
Pour the batter into the pan and bake on the middle rack.
After baking, let the cake cool in the pan for about 30 minutes, then turn it out and let it cool completely.
Buttercream
Separate the eggs. Warm the egg whites with the sugar over a water bath until the sugar has dissolved and the mixture reaches about 158°F (70°C), stirring constantly and thoroughly.
Now whip the hot mixture in a stand mixer until it has cooled to room temperature and tripled in volume.
As soon as the meringue is at room temperature (important!), add the butter a little at a time with the mixer running on medium speed.
Divide the buttercream in half, sift the cocoa powder into one half and stir it in.
Assembling
Cut the cake into 4 to 5 layers. Spread the first layer with the light buttercream and scatter a few mandarin oranges on top if you like, then place the next layer on top... keep going until the cake is stacked and filled again.
It's important that the cake now chills in the fridge for at least three hours, better overnight, so it is firm enough to decorate calmly.
Now spread the dark buttercream generously over the cake, cover it with ladyfingers and decorate as you like.
