If you're like me and sometimes feel a little guilty that your waffle iron hardly ever gets used, this recipe is probably just right for you. These cookies are super easy to make and always stay a little soft.

Ingredients

Makes 30

  • 2 ¾ oz80 gmarzipanfinely grated. A sweet almond and sugar paste. In the US and the UK, use marzipan.
  • 2large eggs
  • 6 tbsp86 gunsalted buttersoftened. German butter is unsalted and has about 82 percent fat. In the US use unsalted butter; European-style unsalted butter is closest. In the UK, unsalted butter.
  • ½ cup plus 2 tbsp120 ggranulated sugar
  • 1 ¼ cups160 gall-purpose flourIn German recipes plain flour means soft wheat flour Type 405 unless stated otherwise. In the US use all-purpose flour; in the UK, plain flour.
  • 1 pinchsalt
  • ⅛ tspbaking powderoptional (a knife tip). German baking powder is sold in 15 g packets, each meant for about 500 g (4 cups) of flour. In the US and the UK, use baking powder, 1 tbsp plus ¾ tsp per 15 g packet.
  • 2 to 3 dropsbutter vanilla flavoring (rum flavoring tastes great too)optional. Rum flavoring is a concentrated rum flavoring without alcohol. In the US use rum extract; in the UK, rum flavouring.

Method

  1. Beat one egg with the grated marzipan until everything is creamy.

  2. Beat in the softened butter.

  3. Beat in the sugar.

  4. Beat in the second egg.

  5. Briefly mix in the flour (& the baking powder & flavoring, if using).

  6. Drop teaspoon-sized portions onto your waffle iron. Set the waffle iron to medium (mine has 6 heat settings & I set it to 3 for these cookies!). Bake the cookies until light golden & let them cool on a wire rack. How many cookies you get depends on how big you make the portions.
