A creamy cheesecake with apple and a nutty cinnamon crumble. 8-inch (20 cm) pan
Ingredients
piecesServings
- 1 stick plus ½ tbsp120 gplant-based buttersoftened
- 2 cups250 gspelt flourWithout a type number, German recipes usually mean the light Type 630 spelt flour, which behaves much like all-purpose flour but absorbs a little less liquid. In the US use white (light) spelt flour; whole spelt flour makes a denser, darker cake, so use all-purpose flour instead if light spelt is not available. In the UK use white spelt flour; wholemeal spelt makes a denser, darker cake, so use plain flour instead if white spelt is not available.
- ½ cup100 ggranulated sugar
- 3 tbsp20 gground almondsFinely ground blanched almonds. In the US use blanched almond flour (almond meal with skins gives a darker, coarser crumb); in the UK, ground almonds.
- 1 tspground cinnamon
- 2apples
- 2large eggs
- 1 cup250 glow-fat quarkQuark made from skimmed milk, firmer and tangier than the full-fat kind. In the US use nonfat Greek yogurt strained overnight, or plain skyr; in the UK, quark (most UK quark is already fat-free).
- ½ packetvanilla custard pudding powder½ packet is about 18 g. A German packet of pudding powder is flavored starch (about 37 g) that is usually cooked with 2 cups (500 ml) of milk and sugar into a thick pudding. In the US use about ⅓ cup (40 g) cornstarch plus 1 tsp vanilla extract per packet, so half of that here; in the UK, custard powder, about 40 g per German packet (it is unsweetened, so it swaps 1:1 by weight).
- ¼ cup50 ggranulated sugar
- powdered sugar, for dustingVery finely ground sugar for icings and dusting. In the US: powdered sugar (confectioners' sugar); in the UK: icing sugar.
Method
- Work the butter, flour, ½ cup (100 g) sugar, ground almonds and cinnamon into a crumbly dough.
- Put ⅔ of it into a greased 8-inch (20 cm) springform pan and press it down firmly.
- Quarter the apples, then cut them into slices.
- Spread the slices over the base.
- Mix the low-fat quark, eggs, custard pudding powder and ¼ cup (50 g) sugar and pour it over the apple slices.
- Scatter the remaining crumble over the quark filling.
- Bake for 35 minutes at 350°F (170°C) convection (fan).
- Dust the cooled cake with powdered sugar.
